Tomato Toast

Tomato toast is so simple and so good!  Summer tomatoes won’t last forever so make this soon! It’s good as is but each time I add an ingredient or two, like pesto, Parmesan, fresh mozzarella or a drizzle of balsamic glaze.  I will miss this delicious toast when the last summer tomato is picked 🍅 

Ingredients:

1 large tomato

Drizzle of olive oil

Pinch of salt and pepper

Slice of sour dough bread

1 garlic 

Instructions:

1.  Grate tomato over a bowl

2.  Stain the tomato 

3.  Combine strained tomato pulp with a drizzle of olive oil and pinch of salt & pepper. 

4. Toast bread and lightly rub with garlic clove.

5.  Spoon the tomato mixture on toast. I like to drizzle on a little more olive oil and salt if needed. Enjoy!
